You can make this Vegan Stovetop Meat Lasagna Skillet quickly and easily. It tastes like traditional lasagna, but you dont have to heat up the oven. Its full of Italian spices, vegetables, and a hearty vegan meat substitute.
Ingredients:
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup vegan ground meat substitute
- 1 cup sliced mushrooms
- 1 red bell pepper, diced
- 1 can 14 oz crushed tomatoes
- 1 can 14 oz tomato sauce
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 8 lasagna noodles, broken into pieces
- 1 1/2 cups vegetable broth
- 1/2 cup vegan ricotta cheese
- 1/4 cup nutritional yeast
- Fresh basil leaves for garnish
Instructions:
In a large skillet, heat olive oil over medium heat
Add diced onion and minced garlic, saut until softened
Add vegan ground meat substitute, mushrooms, and red bell pepper
Cook until vegetables are tender and meat substitute is browned
Stir in crushed tomatoes, tomato sauce, oregano, basil, salt, and pepper
Add broken lasagna noodles and vegetable broth
Stir to combine
Bring to a simmer, then reduce heat to low
Cover and cook for about 20-25 minutes, or until noodles are tender, stirring occasionally
Once noodles are cooked, dollop vegan ricotta cheese on top and sprinkle with nutritional yeast
Cover and cook for an additional 5 minutes, allowing the ricotta to warm through
Garnish with fresh basil leaves before serving
