Its fun to eat these vegan candy corn sugar cookie bars, which taste just like regular candy corn. You can eat them on Halloween or whenever you want a fun, sweet treat
Ingredients:
- 1 cup vegan butter, softened
- 1 cup granulated sugar
- 1/2 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup vegan white chocolate chips
- Yellow and orange food coloring
Instructions:
Preheat the oven to 350F 175C and line a 9x13 inch baking pan with parchment paper
In a large bowl, cream together the vegan butter and sugar until light and fluffy
Mix in the applesauce and vanilla extract until well combined
Add the flour, baking powder, and salt, and mix until a dough forms
Divide the dough into three equal parts
Leave one part plain, color one part yellow, and color the other part orange
Press the plain dough into the bottom of the prepared pan
Layer the yellow dough on top of the plain dough, followed by the orange dough
Sprinkle the vegan white chocolate chips evenly over the top
Bake in the preheated oven for 20-25 minutes, or until the edges are lightly golden brown
Allow to cool completely before cutting into bars
