If youre craving a warm treat in the fall, these gluten-free pumpkin spice muffins are the way to go. They are soft, moist, and full of warm spices. They also dont have any dairy and are easy to make vegan by using flax eggs.
Ingredients:
- 2 cups almond flour
- 1/2 cup coconut sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons pumpkin pie spice
- 1 cup pumpkin puree
- 2 eggs or flax eggs for vegan option
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 cup dairy-free chocolate chips optional
Instructions:
Warm the oven up to 350F 175C and put muffin tin liners in it
There is pumpkin pie spice, baking powder, baking soda, salt, and coconut sugar in a large bowl
Mash the eggs or flax eggs and add them to a different bowl
Then add the melted coconut oil and vanilla extract
Add the wet ingredients to the dry ones and mix them together until everything is well mixed
You can add chocolate chips if you want to
Fill up each muffin cup about three quarters of the way to the top with batter
Put it in the oven and bake for 20 to 25 minutes, or until a toothpick stuck in the middle comes out clean
After baking, let the muffins cool in the pan for 5 minutes before moving them to a wire rack to cool completely
