Ingredients:
- 2 Portobello mushroom caps
- 2 ripe peaches, sliced
- 4 burger buns
- 4 slices of Swiss cheese
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 1 teaspoon honey
- Salt and pepper to taste
- Fresh arugula for garnish
- Mayonnaise and Dijon mustard for spreading
Instructions:
Preheat grill to medium-high heat
In a small bowl, whisk together balsamic vinegar, olive oil, honey, salt, and pepper
Brush the Portobello mushroom caps and peach slices with the balsamic mixture
Grill the Portobello mushrooms for about 4-5 minutes per side until tender, adding Swiss cheese slices during the last minute of grilling
Grill the peach slices for 2-3 minutes per side until they have grill marks and are slightly caramelized
Toast the burger buns on the grill until lightly browned
Assemble the burgers by spreading mayonnaise and Dijon mustard on the bottom bun, then placing a grilled Portobello cap with melted cheese on top
Add grilled peach slices and fresh arugula
Top with the other half of the bun and secure with a toothpick if needed
Serve immediately and enjoy
