Ingredients:
- 2 cups cooked rice
- 1 cup kimchi, chopped
- 1/2 cup diced carrots
- 1/2 cup diced bell peppers
- 1/2 cup frozen peas
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon sugar
- Salt and pepper to taste
- 2 eggs
- Green onions, for garnish
Instructions:
Heat vegetable oil in a large pan or wok over medium-high heat
Add minced garlic and saut for about 30 seconds until fragrant
Add diced carrots, bell peppers, and frozen peas
Stir-fry for 3-4 minutes until vegetables start to soften
Add chopped kimchi and cook for another 2-3 minutes, stirring occasionally
Push the vegetable mixture to one side of the pan and crack the eggs into the other side
Scramble the eggs until they are mostly cooked
Combine the scrambled eggs with the vegetable mixture in the pan
Add the cooked rice to the pan and stir-fry everything together for 3-4 minutes
Drizzle soy sauce and sesame oil over the fried rice
Sprinkle with sugar, salt, and pepper
Stir to evenly distribute the seasonings
Cook for an additional 2-3 minutes, allowing the flavors to meld and the rice to get slightly crispy
Remove from heat and garnish with chopped green onions
Serve hot and enjoy your delicious Kimchi Fried Rice Bowl
