Ingredients:
- 1 cup vegan cream-filled chocolate sandwich cookies, crushed
- 1 cup vegan cream cheese, softened
- 1/2 cup granulated sugar
- 1/4 cup unsweetened almond milk
- 1 tsp vanilla extract
- 1/4 cup vegan butter, melted
- 1/2 cup cocoa powder
- 3/4 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
Instructions:
Preheat oven to 350F 175C
Grease and line a square baking pan with parchment paper
In a mixing bowl, combine crushed cookies, melted vegan butter, and 1/4 cup of granulated sugar
Press evenly into the bottom of the prepared pan to form the crust
In another bowl, beat vegan cream cheese with remaining 1/4 cup of granulated sugar until smooth
Add almond milk and vanilla extract, and mix until well combined
In a separate bowl, whisk together cocoa powder, flour, baking powder, and salt
Gradually add this dry mixture to the cream cheese mixture, stirring until just combined
Pour the brownie batter over the cookie crust in the pan
Use a spatula to spread it evenly
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out mostly clean with a few moist crumbs
Allow the brownie bars to cool completely in the pan on a wire rack
Once cooled, refrigerate for at least 2 hours or until firm
Cut into bars and serve
