Moroccan Carrot Salad with Millet and Pomegranate

Moroccan Carrot Salad with Millet and Pomegranate is a colorful and tasty dish that combines the sweet taste of carrots with the sour taste of pomegranate seeds and the nutty taste of millet. This healthy salad tastes very different thanks to the fresh herbs and spices that are based on Moroccan food.

Ingredients:

  • 3 cups grated carrots
  • 1 cup cooked millet
  • 1/2 cup pomegranate seeds
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped red onion
  • 1/4 cup chopped toasted almonds
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • Salt and pepper to taste

Instructions:

In a large bowl, combine the grated carrots, cooked millet, pomegranate seeds, cilantro, mint, red onion, and toasted almonds

In a small bowl, whisk together the olive oil, lemon juice, ground cumin, ground coriander, salt, and pepper

Pour the dressing over the salad and toss to combine

Chill the salad in the refrigerator for at least 30 minutes before serving

Garnish with additional fresh herbs and pomegranate seeds if desired
