Ingredients:
- 1 cup quinoa
- 2 cups water
- 2 sweet potatoes, diced
- 1 can 15 oz black beans, drained and rinsed
- 1 cup corn kernels
- 1 red bell pepper, diced
- 1 avocado, sliced
- 1/4 cup cilantro, chopped
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions:
Rinse quinoa under cold water
In a saucepan, combine quinoa and water
Bring to a boil, then reduce heat and simmer for 15 minutes or until water is absorbed
Fluff with a fork and set aside
Preheat oven to 400F 200C
Toss diced sweet potatoes with olive oil, cumin, chili powder, salt, and pepper
Spread on a baking sheet and roast for 20-25 minutes or until tender and slightly crispy
In a large bowl, mix cooked quinoa, roasted sweet potatoes, black beans, corn, red bell pepper, avocado, and cilantro
In a small bowl, whisk together lime juice, olive oil, salt, and pepper
Drizzle the dressing over the quinoa mixture and toss to combine
Serve the quinoa mixture in bowls, garnished with additional cilantro and lime wedges if desired
